About this experience
Food is the best entry point to Moroccan culture. Your class starts at a local market where your cook explains the spices — ras el hanout, cumin, saffron, smen — and how to choose preserved lemons and olives. Back in the kitchen, each guest gets a station and prepares a tagine (chicken with lemon, beef with prunes or vegetables), zaalouk and a tomato salad, and learns to shape bread for the communal oven.
While the tagine simmers, you master the ritual of mint tea, then sit down to share your lunch. You leave with the recipes — and our guide to Moroccan food tells you what else to taste.
